Chinese Chicken Soup

This Chinese chicken soup with ramen noodles is spiced with turmeric, ginger, and chile paste. A filling and delicious way to use leftover chicken.

Ingredient

  • 2 tablespoons sesame oil
  • 2 teaspoons chopped fresh ginger root
  • 2 tablespoons chile paste
  • ½ teaspoon ground turmeric
  • 1 pound chopped cooked chicken breast
  • 1 quart chicken broth
  • 1 cup chopped celery
  • ¼ cup soy sauce
  • 2 teaspoons sugar
  • 1 (3 ounce) package ramen noodles
  • 1 cup shredded lettuce
  • ½ cup chopped green onion
Direction
  1. Heat sesame oil in a large pot over medium heat. Add ginger, chile paste, and turmeric; cook and stir until fragrant, 1 to 2 minutes.
  2. Stir in chicken, broth, celery, soy sauce, and sugar. Bring to a boil; add noodles and simmer for 3 minutes.
  3. Stir in lettuce and remove from heat. Serve garnished with green onions.
